This was on my wish list and I found the perfect place to try it - Le Valentin in the Passage Jouffroy. And yes, it does merit its own post.
I didn't quite "eat my way to enlightenment" but it was close. The "mountain" is topped with gold leaf and a bit of glace chestnut, and the whole thing is dusted with icing sugar snow. The vermicelli you see on the outside is chestnut puree, inside is cream, studded every now and then with more glace chestnuts ("rocks"?). The base is a pate sablee. I ate it slowly and mindfully, with a knife and fork, not reading, not talking, just savouring each mouthful.
Yum! Wonder how long it takes to make such a creation?
